Arugula pesto with walnuts

They simply taste wonderful and not only spice up pasta, but also dishes with meat or salads.

What is less well known, however, is that delicious pestos can also be made from lamb's lettuce and arugula, because normally the leaves are used more for a salad. Arugula pesto recipe No. 1

Ingredients:

  • 150 g arugula
  • 100 ml of olive oil
  • 60 g walnuts
  • 40 g macadamia nuts
  • 2 cloves of garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation:

  1. Thoroughly clean rocket and drain well in a sieve.
  2. Heat a pan and briefly fry the whale and macadamia nuts in it without adding oil.
  3. Then mix all ingredients with a blender for about 60 seconds.
  4. Finally, season the arugula pesto with a little salt and pepper.

Arugula pesto recipe no.2

Ingredients:

  • 3 cloves of garlic
  • 100 g blanched almonds
  • 100 g arugula
  • 50 g curly parsley
  • 200 ml mild olive oil
  • 50 g parmesan
  • sea-salt
  • pepper from the grinder

Preparation:

  1. Wash the rocket and the parsley and let them drain. In the meantime, peel the cloves of garlic.
  2. Roast the almonds in a pan briefly without adding oil.
  3. Put all ingredients in a blender and process to a smooth mass.
  4. Finally, you can season the pesto with pepper and sea salt.
